Sun-Dried Tomato basil Penne Al Tonno

Ingredients:

12 oz MENDOCINO Sun-Dried Tomato Basil Penne
2 tbsp INTERNATIONAL COLLECTION Extra Virgin Olive Oil
1 lb Fresh Tuna
1 oz Sun-Dried Tomatoes, finely Chopped
14 oz can of Chopped Tomatoes
1 Red Pepper
2 oz Anchovies, drained and chopped (optional)
2 oz Black Olives
Large Sprig of Basil chopped
salt and pepper

Method:

Quarter and de-seed the pepper and place skin side up under a hot grill. Grill until the skin bubbles and blackens, then remove from the grill and place in a plastic bag until cool enough to handle. peel the pepper and discard the skin, then slice.

Cook the pasta according to pack instructions. Meanwhile, heat the oil in a large frying-pan and fry the tuna quickly, until slightly browned but still tender. Add the remaining ingredients and the pepper and gently simmer for 5 minutes. Drain the pasta and return to the pan. Toss in the hot sauce and serve.
